Tribute to Texas

Our Tribute to Texas was quite a success!

Attendees to the dinner were:
Bob - Mayor of San Antonio
Donna - Mayor of El Paso
Doris (in absentia) - Mayor of Houston
Erik - Mayor of Corpus Christi
Kathy - Mayor of Lubbock
Jonathan - Mayor of Laredo
Susan - Texas Governor

Everyone came appropriately attired, with mayoral badges and six-guns! And when the dinner cow bell was heard, we had a fabulous repose consisting of:

Hurricane Marga-RITAs
Lone Star Salad
Kit Carson Chili
Ranch Hand Potatoes
and finished it all off with a delightfully chocolate We Struck Oil! Cake

NFL Opening Day 2005

Are you ready for some football??!!

We sure are! Our dinner showed how much:
  • Referee Grilled Steak (be sure to let the meat stay on the grill long enough to get "referee striped" grill marks
  • Football Field Fettucine Alfredo (use spinach fettucine in a 9x11 pan or rectangle plate and place white fettucine in "yard lines" on top -> voila`! football field!)
  • Goal Post Apsaragus
  • Yellow Flag Cornbread (cut your cornbread into triangles ... but take care not to get any penalties - these flags are too good to throw!)
  • Football Cookies and Ice Cream

We took a moment at the beginning of dinner to remember 9/11/01. It is a tribute to the American Spirit that we always perservere. We lifted our champagne glasses to toast America and also to remember my friend Mike who we lost that day. We will never forget.
